KAJU MATHI

Dayal House Kaju Mathi is a popular North Indian savory snack, named not for its ingredients, but for its shape, which resembles a cashew nut (kaju). Despite the name, this snack typically does not contain cashews; instead, it gets its identity from the distinct crescent or curved shape that mimics the form of a kaju. It is especially common during festivals like Diwali, where a variety of savory and sweet snacks are prepared and shared.

Made from refined wheat flour (maida), semolina (sooji), ghee or oil, salt, and cumin or carom seeds for flavor, kaju mathi is deep-fried until golden and crispy. The dough is rolled out and cut into crescent shapes before frying, giving it a unique appearance that sets it apart from regular mathris. Some versions may be lightly seasoned or sprinkled with salt for added taste.
